Here is another easy way to make delicious rose honey for family, guests, visitors, friends etc.
You will need 4 cups scented rose petals, 900 g. clear honey, says Pamela Westland in her lovely book The Victorian Book of Flowers.
Wash and dry the petals and shred them coarsely in a blender.
Gently heat the honey until it melts, pour it over the rose petals and process for three seconds. Pour the honey into clean pretty jars, and decorate them as you wish.
She says you can serve this honey on toast or toasted teacakes, muffins or scones.
For a change, you can also use the honey to flavor a plain butter cake or a lemon cake.
Rose honey sandwiches also would be a good lunch treat for kids, or office goers.
