How to make rose petal preserve as topping for Vanilla etc.


If you can find really old fashioned highly scented roses, either pink or red, you can make a delicious rose petal preserve out of them. You can use it as topping for vanilla and strawberry icecream or trifles etc.


  1. 50 g. red or pink rose petals.
  2. 250 g. sugar
  3. 50 ml water
  4. one tablespoon lemon juice
  5. one tablespoon orange juice
  6. cochineal optional

Cut away the leafy matter and the white or yellow part at the base of each rose petal, rinse and drain thoroughly.


Bring the sugar, water, and lemon and orange juice to the boil to make a syrup. Add the rose petals and simmer over the lowest possible heat, stirring all the time. Cook for about 30 minutes or until thick. Add a few drops of red cochineal for a better colour. Then pot at once in small jars or moulds brushed inside with a little glycerine.
