Grow a pot of basil in your car!
Did you know that you can grow a pot of basil in your car?! Basil adores hot, dry conditions so it will do well inside a greenhouse or somewhere warm and bright, says Allan Shepherd in her book The Organic Garden Green and Easy. She knows a gardener who has a pot of basil growing in her car!
Basil leaves are great for adding to tomatoes, flavoring salads, sauces and vegetables. Dried or fresh, they make a delicious tea.
Stuffed tomatoes with Basil:
4 large tomatoes
half cup soft bread crumbs
one fourth cup chopped fresh basil
1 clove garlic, crushed
one tablespoon minced onion
half teaspoon salt
a little pepper
5 tablespoons olive oil
2 tablespoons Parmesan cheese
Preheat the oven to 375 deg. F. Halve the tomatoes and spoon their pulp into a bowl. Place the halves cut, cut side down, on paper towels to dry.
Mix the bread crumbs, mozzarella cheese, basil, garlic, onion, salt, pepper, and 4 tablespoons of the oil with the pulp.
Arrange the tomatoes, open side up, in a baking dish, fill with the pulp mixture. Sprinkle with Parmesan cheese and drizzle with the remaining oil. Bake for 20 minutes. Serves 4 to 8.
