Cashew Nut Rice
You can serve this in an attractive glass bowl. You will need:
4 oz/100 gm onion, very finely chopped
one stick celery, halved lengthwise, then sliced finely
one tablespoon sunflower oil
225 g. long grain brown rice
450 ml water
150 ml dry white wine
100 g cashew nuts
freshly ground black pepper
fresh coriander leaves
Heat the onion and celery in the oil in a pan for 2 minutes. Add the rice and cook for another minute to turn the grains transparent. Stir in the water, wine and bay leaf. Cover and bring to the boil. Reduce to a simmer for 20-25 minutes, according to the type of rice used. The grains should be tender, and if any water remains uncover the pan and turn up the heat for a minute or two. Stir in the cashews and season to taste. Discard the bay leaf. Garnish with the fresh herb.
